Easy peasy Vegetarian paccheri pasta

It’s National Vegetarian Week, which is something we can all get behind. So, whether you’re a full-time veggie or trying something new for the week, this paccheri pasta dish is so simple, yet so tasty. It’s perfect for a quick filling weekday dinner.

This traditional Italian recipe is a must-have go-to recipe to have up your sleeve for when you crave something quick and tasty. The dish is packed with flavour from the basil to the green olives so your taste buds won’t be disappointed. Buon appetito!

Paccheri pasta with sundried tomatoes and olives.

Serves 2


Paccheri (enough per person)

Bag of baby spinach

Handful of pine nuts

Handful of stoned green olives, halved

8-10 sun dried tomatoes in olive oil, roughly chopped

Handful of basil

Salt and pepper


Put a large pan of salted water on to boil. Add the paccheri and cook until tender 

Take a large bowl and throw all the ingredients in (minus the pine nuts and salt and pepper) 

Mix well

Drain the paccheri and toss into the bowl.

Mix well, season according to taste 

Serve into bowls and top with pine nuts
