Paccheri (enough per person)
Bag of baby spinach
Handful of pine nuts
Handful of stoned green olives, halved
8-10 sun dried tomatoes in olive oil, roughly chopped
Handful of basil
Salt and pepper
Put a large pan of salted water on to boil. Add the paccheri and cook until tender
Take a large bowl and throw all the ingredients in (minus the pine nuts and salt and pepper)
Drain the paccheri and toss into the bowl.
Mix well, season according to taste
Serve into bowls and top with pine nuts
